This is the recipe for those of you who swear they never even want to taste Brussels Sprouts. In my humble opinion, you don’t know what you’re missing, so please give these a try. The combination of salty bacon makes the sweetness of the Brussels Sprouts shine – I do think you’ll change your mind.
- 2-3# fresh brussels sprouts, trimmed, and if large, cut in half
- 2 tbsp. olive oil
- fresh ground black pepper
- 6 strips bacon
Preheat the oven to 400 degrees.
Trim the brussels sprouts and put them into a large zip lock. Add the olive oil and shake. Pour the brussels sprouts out onto a foil covered cookie sheet. They should lay in a single layer.
Cut the bacon into 1″ pieces and lay out over the top of the brussels, so they don’t touch.
Put the pan into the top 1/3 of the oven. In about 10 minutes shake the pan or turn them over with a spatula. Shake to spread them out flat again. Cook until the bacon is crisp. It will take anywhere from 20 to 25 minutes. Put into a serving bowl and enjoy.
